Piirakkaa savuporosta

Vanha harmaapäänalle ja hänen muorinsa kävivät taannoin Lapissa ja toivat sieltä meille tuliaisena melkoisen satsin kylmäsavuporoa. Tällainen "lihallinen ilo" kirvoittaa epäilemättä reseptin jos toisenkin, mutta aloitetaan kuitenkin siitä kaikkein itsestäänselvimmästä eli savuporopiirakasta.



Piirakkataikina:

2 dl vehnäjauhoja
1 dl ruisjauhoja
1 tl suolaa
1 dl vettä
1 dl öljyä
1 tl leivinjauhetta

Täyte:

Savuporoa
Parsakaalia
Fetajuustoa
Pippuria
Basilikaa
2½ dl maitoa tai kermaa
2 kananmunaa

Valmista piirakkataikina sekoittamalla ainekset keskenään ja levitä taikina voidellulle piirakkavuoalle.



Lämmitä uuni 200-asteiseksi ja laita pohja hetkeksi sinne kohoamaan. Kun pohja on hieman noussut, lado täytteet sen päälle. Parsakaali kannattaa laittaa ensiksi ja ripauttaa hippunen suolaa sen päälle ennen poron ja juuston lisäämistä. Lisää sekaan hieman pippuria ja basilikaa.



Sekoita maito (tai kerma), munat ja hieman suolaa keskenään ja kaada seos täytteiden päälle.



Paista 200º:ssa uunissa, kunnes munamaito on kiinteytynyt ja väri on kohdillaan.



Piirakan kyytipojaksi sopii mainiosti mm. kirpeästi humaloitu London Bride -olut.

Cold-smoked reindeer pie

Old Grey Bear and his missus visited Lapland recently and brought a good amount of cold-smoked reindeer for us as a souvenier. Apparently this will result a recipe or two but let's start with the most obvious one: the cold-smoked reindeer pie.

Dough:

2 dl wheat flour
1 dl rye flour
1 ts salt
1 dl water
1 dl oil
1 ts baking powder

Filling:

Cold-smoked reindeer
Broccoli
Feta cheese
Pepper
Basil
2½ dl milk or cream
2 eggs

Prepare the dough by mixing all ingredients and lay it on the pie pan. Warm up the oven to 200º C and put the dough into the oven for a few minutes. Once dough has risen a little bit, lay the filling on top of it. Add the broccoli first and spice it with salt before adding the reindeer and the cheese. Add some pepper and basil. Mix the milk (or cream), eggs and a little bit of salt together and pour over the filling. Bake in 200º C until the milk and egg mix has set and the pie has nice color.

And if you ask me, the well-hopped London Bride ale makes a good companion for this pie.

Savuporo-ohjeita on tulossa vielä lisääkin, mm. pasta :-)
